no prob. they pair well together. and yes, you can repeat this process up to the MPC's limit (8 plugins on the legacy boxes, some multiple of that on the new gen, at least 16). the other trick you can use is key range assignments on MPC to split a single MIDI channel if you're pressed for tracks on Deluge, e.g., set Jura and Iona to the same MIDI channel and then adjust their key ranges to effectively be multitimbral on the same channel. most plugins also have +/- octave settings so you can move C2 up/down the key range as needed)
So I've assigned the midi channels accordingly on the MPC and Deluge. But when I play midi notes on my Deluge in midi channel 1, and switch to another plugin on the MPC that is assigned to midi channel 2, it is also triggered.
not sure. i'm on community firmware with MIDI follow enabled so it just automatically switches the Deluge MIDI channel when I move between different MPC plugins.

can you double check your midi MPE settings, unexpected midi issues can arise if LOWER and UPPER are not set to 0 or OFF for both IN and OUT. (that is, if you are not using an MPE device with your deluge) otherwise, if you are using community firmware, can you confirm if you are using midi follow at all? check if it's enabled.

would also add to double check that all plugin tracks are set to MERGE not AUTO in the MIDI settings.
