I recently took my Deluge apart to do some multimeter testing for a project & when I got it all the way apart, I had 1 fewer washers than I had encoders//potentiometers. I looked online & found this video by Oliver Ozoux & the shot at the end with all the parts laid out also shows 6 washers (including 2 big ones for the non-detented encoders)
The problem is that from all the other shots I can find in the video, all 5 of the other knobs appear to have washers. Am I missing one? I currently don't have one on my main selection encoder. How would I go about ordering replacements, or am I better going to a hardware store & trying to match it?

Yes, should be a washer there. I would just match it at a hardware store. It’s the same as the washers on the other detent encoders (vertical and horizontal knobs).
