How do I keep MIDI IN data from going to multiple tracks?

All of the stock synths clip and distort because they are too loud. Yeah, they are fine when you're at the default velocity of 64. But I use an external controller that uses the full velocity range, and they all sound like shit until you set the volume to half. I haven't adjusted the presets because it's just too much work.
