It would be awesome to be able to record single notes for an instrument on one sample and have it be chopped up into a multisample.

I also got similar idea but the difficulty here is how Deluge can decide the real pitch of slices as it has difficulties with auto pitch detection. Though we still could set up ranges by manually selecting the slices like we can do it by selecting different files currently so I second this request.
