Is it possible to record changes to pitch automation?
Example: if I want to have a tom or high hat pitch up and down in the sequence.

Sure, just patch it to the LFO and set the LFO to the value you like

You can assign transpose to one of the gold knobs. However it makes changes on the full range in both directions, so not the finest solution.
